Baked Ginger and Citrus Bananas

Serves 6

50g soft margarine
50g white sugar
1 tablespoon lemon juice
1 tablespoon orange juice
1/2 teaspoon cinnamon
1 teaspoon grated lemon rind
2 teaspoons peeled and finely chopped root ginger
6 bananas,peeled,cut in half cross wise

Preheat the oven to 375f, 190c, gas mark 5.

Beat together the margarine and sugar and then beat in the lemon and orange jucie,cinnamon,lemon rind and root ginger. Lightly grease a shallow baking dish and arrange the banana pieces on the bottom. Pour over the butter/ginger mixture and bake in the preheated oven for 15 minutes. Serve immediately.
