Sweetcorn with Basil and Lime Salsa

Serve 2

2 cobs sweetcorn, husks removed
20g basil
½ tbsp clear honey
1 garlic clove, roughly chopped
1 small green chilli, deseeded and chopped
1 tsp salt
Juice and finely grated rind of 1 lime

Bring a large pan of water to the boil, then drop in the sweetcorn cobs and boil for 6-8 minutes until tender. Drain and cut into thick slices.
Meanwhile put all the other ingredients, except for the lime zest in a liquidiser and process briefly, put the salsa in a bowl, scatter over the lime zest and use as a dipping sauce with the sweetcorn.
